What's better between vpn and bridges to be completly anonymous in tails ?

Depends. Either one you need to be sure you can trust the provider. Optimally you would want to set up a bridge on public wifi. There are some VPN providers which are trustworthy, dig a bit through the forums to find one. If you are on Tails everything should be set up to grant you anonymity.
