When should I use a socks 5 proxy versus an http proxy? What proxy sites do you recommend?

The source matters the most so if your using rdp or socks that most carders are using then your success rate will not as good as the success rate of getting socks or rdp from less popular sources. The most successful carders are the ones whom think outside the box.
